They will insist on connecting using tracking devices, so I'm looking for clients on both Android and iOS. Conversations on Android and SiskinIM on iOS seem like they would be a good fit. Both are under GPLv3, both support OMEMO, etc.

I might have to try running a server. I also like the way they’re looking for a nominal fee to use their server(s); I think folks expecting free services is a path that leads to problems.
